This weekend we had our niece come to stay with us. She is so cute and girly and loves to talk! We started out yesterday morning at a soccer game-M's high school team had a game up here, then we went to Chuck E. Cheese and played games for a while and E took home a few treats from there. Then we went to the Mall of America to walk around, and head to the disney store. She ended up getting a fingernail polish set, which we of course used lastnight! Came home, ate supper and watched Shrek 2. She must have been tired out because it is almost eight and she is still sleeping! :) Such a fun weekend.

Feeling Inspired
I'm feeling very inspired this morning. I just read a few blogs and they really got me thinking. I don't know what you all think about eating healthy, but I'm really getting into it! As the saying goes- "You are what you eat", and I'm now beginning to believe that more than ever! Everything that I read is telling me that good vegetables, fruits, meats, eggs, even breads can help your body work it's best. Now I know that most of you already knew that-so did I, but it never really clicked! Here I am, always tired, feeling worn out, and guess what-hungry! Do you know why I'm hungry? I'm hungry because a majority of all that I eat are foods that have been totally processed (Tomato soup, cheese singles, cheetos, etc). All of those "foods" are filled with fillers-they make our bodies feel full for a small amount of time, and then you are hungry again. Kind of pointless to eat those, when M and I could just be eating REAL foods, without fillers. Who knew? I think that I've finally found my passion, and if I didn't have to do homework, or go to work I would keep researching!

Veggie Pot Pie with chicken
M and I have been trying to eat healthier the past few months or so (It's really hard for both of us-we like the convenience and taste of junk food!). We have done a pretty good job so far, and I feel like we are on our way to eating healthier every day. Tonight for supper, I made a vegetable pot pie with chicken, and a whole wheat crust. It was awesome! I know that sounds funny-a vegetable pot pie with chicken-but I heard that in order to get all of your veggies in for the day, it's easier to think of them as a meal, and as your protein for a side. So instead of having chicken noodle soup with veggies, try vegetable noodle soup with chicken. There are lots of benefits of eating this way-one big one for me is that it does not affect your cholesterol, and there is a lot less intake of trans fats. (Cholesterol mainly comes from animal products as well as trans fat.) SO, this is my new project-working on eating more vegetables and fruits, and less carbs and protein. (I'm not going to cut them out-just lessen the amount that I eat, because I know that we eat too much!) Can you tell that I'm really into this whole healthy eating thing?? I'm going to try to update more often (and I know that I've said that before), but I might try to turn this into a healthy eating type of blog.

Yesterday was a good day! We started out looking for garage sales, driving around wherever we found a sign. We didn't find any. Instead we went to thrift stores, looking for entertainment stands, or really whatever we could find. I found something that I have been looking for for a very long time! Friends, Scene it. Something that you need to know about me: I absolutely love the show FRIENDS. This show has an episode for every life event. It is hilarious! M and I started watching it as soon as we got married, going through all of the seasons. It was something that we looked forward to most nights! Now that we have seen all of the episodes, it's even more fun to play trivia about it!
After we found that, we went to more thrift stores, and came across the dirtiest one that I have ever been in. Another thing you should know about me is that I am kind of a germ freak. This store was disgusting. I mean they had EVERYTHING in there! Bathroom supplies, baby formula...you name it. Gross. As we were walking around I told M that we were not buying anything, and to stop touching things! I will never go back there.
Next, we found the most delicious ice cream place right down the road from our apartment (after washing our hands of course!). I had a caramel high rise waffle cone (coffee, caramel and toffee-yum!), and M had a vanilla cone. It was soo good! It's not just your regular kemps ice cream, they actually make it. Sooo good! As we were walking out eating our cones, we decided that it is a place that we will see more of this summer.
At the end of the day we came home to Mr Snoop and made dinner.

So I did it. I started school...again. This is my third try at it, and I can't wait to be done! Now I have never been a person who enjoys any type of schoolwork, but I also don't want to work at a retail type of job for the rest of my life. I want my nights and weekends, holidays, and summer vacation! And someday when I have children, I want to be able to provide the best for them.
If you followed very closely, you notice that I said summer vacation. That must mean I want to be a teacher...right??
Correct! I plan on becoming a Family and Consumer Science teacher. When thinking about what I wanted to do when I "grow up", I always came back to being a teacher. I thought about teaching spanish for awhile, but I just didn't seem too into it when I was taking classes. This time, when I was thinking about it, something just "clicked"! I am really excited about this, and am taking four classes this summer!
Here's hoping I finish school in a timely manner! :)
