It's a perfect day to sit on the couch, with a bowl full of oatmeal. Not just any oatmeal though! Today I'm making baked oatmeal. I'm not an oatmeal lover by any means, but I absolutely love this one. And you're in luck, I'm going to share the recipe with you!

Baked Oatmeal

Ingredients:
1/2 C butter
1 C brown sugar
1 C milk
2 eggs
1 tsp. vanilla
3 C dry oatmeal
1 tsp. salt
2 tsp. baking powder
1 tsp. cinnamon
1/2 C nuts(optional)
1/2-1 C raisins, blueberries, bananas, etc. (optional)

In a microwaveable bowl, melt butter and brown sugar.
Add vanilla, milk and eggs (beat eggs really well, or they will make it taste eggy)
In a separate, larger bowl, mix oatmeal, salt, baking powder, and cinnamon.
Stir together wet and dry ingredients, then add fruit and nuts.
Pour into greased 8" square pan, or a large pie pan.
Bake 20-25 min. at 350 degrees, or until center is firm.
Serves about 6

You can make this the night before, and bake it in the morning.
You can also cut the butter and brown sugar in half...but it's not as good!
